And some people won't eat catfish cause they have no scales.
Though bluegill tend to be small, they are still really good eating.
For a lot of meat from one fish, Channel Catfish are best but if you are trying to grow them in too small a tank, you won't manage to grow large healthy catfish.
TCLynx: Thanks. But I take it you are pretty much convinced that Channel catfish are the best option? I live in Florid, near Gainesville, so our climates are relatively the same.

I haven't had my bluegill long enough to give an answer about how long. And there is a second question for ya, what is "plate size"? I know up north when we would go fishing, rather small blue gill would be getting eaten. And if you are managing a farm pond, to keep the Bluegill population in check you need to harvest many more bluegill than bass and be eating or disposing of small fish.
I've heard of some people growing out hybred bluegill in a long growing season. Here in Florida I expect we will have plenty up to eating size in a year from getting the fingerlings.

We have taken to doing the fried fish nuggets and substituting them into sweet and sour or other Asian type dishes instead of the pork or chicken.
Yum (though we haven't gotten to try this with bluegill yet but works with catfish.)
