Perhaps it isn't exactly Aquaponic but canning our own produce is an important part of gardening and sustainability to me.

Today I'm canning some soup where the only ingredients that didn't come from our own garden is the corn, garlic and spices.

The corn at least was local and the rest, carrots, onions, potatoes, beans (3 types) and duck was all grown right here.

We have found that my soup is often so much tastier than the stuff from the store. I like to keep a shelf full for quick meals.

Oh and to top things off, I picked cucumbers today, 13 lb of cucumbers. So the cook has sliced up 8 lb of them for me to pickle in the morning and they are currently soaking in prep for that.

Nope, never canned just the meat. The cook seems a little resistant to that but I'm slowly converting him. He initially didn't think anything canned was going to be any good but he likes my soups and chili.

The Muscovy duck is dark meat and actually rather lean so not oily the way other kinds of duck usually are.

Just another quick note, Dad gave me some canned rabbit on his last trip to visit. The meat is almost pure white like chicken breast and oh so good :)

Heya TC,

Do you ever just can the duck meat? My parents used to can meat all the time, chicken, beef, elk and deer.
We didn't get to eat alot of duck but the other canned meats are excellent. Great for stews, casseroles and sandwiches.
I would love to try some of those ducks one day. From what I have read of your experience they seem like a great stock to raise.
