One uniseal is for the emt that goes into the ground through the 5 gallon pot. Just to keep it from leaking. The other uniseal out the side is the collection line.

Basically I was planning to just put the emt into the ground and lay the pipe under the ground pot and the hole would be on the bottom of pot but to the side of the emt pipe)..this is confusing me,why does it need to drain in two places? two uniseals per pot?

I would not use the Vertigro collection system. I would use the standard Vertigro stack with the 1/2" emt pipe in the ground. Then I would put a large 5 gallon plastic pot in the bottom. Cut a hole it and install a uniseal to make it water tight. Then cut a 1" hole 1" from the bottom in the side and mount uniseal to plumb it to a drain back line. This could be a bigger line. 2-4".
