Fishless Cycle, high nitrites

HI! I'm born and raise in Texas, living near the Austin Area now (Go Horns, Go Texans), but originally from Southeast Texas. I'm college educated but not working - BORING! I'm new to Aquaponics, but I'm obsessed, and that's okay. I'm in the process of planning my first outdoor-backyard system. It'll be small compared to what some of y'all have though. It's going to be a 70 gallon stock tank, with a custom built grow bed (my husband is super handy that way) filled with crushed granite, with a continuous flow and drained with a siphon.

70g FT to 56g ST pumped to GB siphoned back to FT.
FT and ST on same level.
(GB = 15sf = 6'long x 30"wide x 10"deep filled with 9" of crushed granite)
