I bet this would work on top of a media bed.

Not on top. Potatoes that are exposed to sunlight have a green look and they can be poisonous.  Under the media would be fine. Never eat green potato or potato greens ( leaves).. Different matter altogether for sweet potatoes...

The potatoes grow above the media and in the straw which must be dense enough to keep the sunlight off the potatoes.

no watering with this method.... I think im going to have to try it!

I did not watch the whole video.. That's the method I use in my raised beds but use compost as the filler. Compost sure would not work in AP.. You'd have a sooty mess through the system in no time.

What about fruit trees?

I have done potatoes in a bucket here but never successfully. They always tend to just die... This however would be worth a try as long as we have the proper planting/start dates.
