well these are for shoots rather than sprouts. With sprouts you are probably rinsing them or spraying them with water so they will tend to be a bit more beaten down but it is important to be rinsing or spraying sprouts with potable water regularly to keep anything nasty from growing in them. With the shoots, the seeds are planted in soil or soil substitute and they get their moisture from the bottom while sitting on capillary matting in my set up. You don't eat the roots of shoots, you cut them off above the soil since it would be too difficult to really get the roots clean enough to make eating the entire plant very reasonable, especially if you eat them raw.
So to answer your question, how is it they look so good, bottom water probably is the answer here. But that won't work for sprouts, only shoots.

TC how did you get those looking so nice... i keep trying to find a way to get good sprouts and havent gotten sunflowers that look that good yet?
