Lunch is ofter leftovers.   So here is rehash of some of last nights dinner etc.

Yes I know the purist think we shouldn't mix Veggies and Fruit. Or even starch. Oh well.

Rice is a mix of Himalayan Red (nutty) and short Brown.  Organic of course. 

Peppers and Tofu I saute in a nonstick skillet cubed firm tofu with some Turmeric for color. 

Then I saute in some EVOO Thick sliced Red bells and Pablano peppers. To this I add some Broccoli stems slices and onions.  A little water if it cooked too high. At the end I add a can of small white beans (cannelli or garbanzo will do) with some fresh chopped garlic.  Only cook long enough to bring the beans to temp. No other spices so you can taste the veggies.  Cook just passed crisp. 

Plated with some very ripe Mano and you are good to go. 

 Oh yeah I also added  Roasted Carrots and Roasted Parsnips When I get a 25lb bag of organic carrots I usually roast 4 lbs of them and keep them in the frig to add to other dishes.  They have a great sweet flavor and bright color.  To roast them I just put them in a glass baking pan with EVOO and some Oregano and Thyme. Cook for 45 mins at 400. Don't Peel.  Use them in just about anything.
