Troy, I need to meet you. I also live in Denton, Tx and I desperately need help and support from experienced aquapons. I saw an old post of yours saying that you are trying to start a commercial operation. I am as well, but not here in Denton. My friend has land in Weatherford where we will be setting up shop this spring.
I know nobody in the area that does what we do and I am having trouble finding supplies without resorting to the internet. It would be awesome to hear from you and find out how/where you obtain your fish, duckweed, medium, etc. I am also interested to know how you and your system handles the Texas heat. Yes, tilapia a jumpy buggers. Trout are even worse! They settle down after a day or so.
