When plants start to bolt, you can usually keep them going a bit longer by snipping off the flowering nodes. I've lost track of how many times I've 'cut and come again' harvested these spinach plants, but after this pic was taken, I harvested most of the leaves and snipped off the flowering nodes (again). We'll see how long this trick will work for. This works well for Basil too (which tastes particularly nasty once they start to go to seed)
