i cook them in stir-fry, so yes, like spinach.  the plants are starchy and will ooze a white sap, which is not poison like milkweed but starch i am told.

That's good to know about the leaves.  Do you cook them like spinach, or just raw in a salad?

i dug this up from the dirt next to the pond. i dug up the cinders and there were no tubers inside the AP system. the leaves are edible however, so its not a total waste
