Personally, I like speckled perch, they can grow up to 15-20 inches - they like deeper water but they can also handle the cold. They usually dont start tearing it up down here till the colder months, jan/feb. Channel cats will do well too, and fun to catch.
Not too sure about bluegill and cold temps. It does not get that cold down here, it will freeze a few times in the winter but never cold enough to ice over the pond. theres plenty of panfish in the springs around here so i guess they can handle it ok

they did not like speckled perch either cause it is invasive, but i think it is the best tasting fresh water fish there is, along with suckers
