So my monster tank is getting overrun by taro.  Time to make squid luau!

2 pounds calamari (squid)
3 pounds luau leaves* see note
1 teaspoon Hawaiian salt
1/2 teaspoon baking soda
6 tablespoons butter
2 medium onions, diced
3 cups coconut milk
1 1/2 teaspoon salt
1 tablespoon sugar 


If harvesting yourself, cut stems above the "V".  You may want to wear gloves, taro contains calcium oxalate, which makes you itchy.  Boiling helps remove it.
Wash leave and stems. Peel stems like you would celery to remove the fibrous outer skin.  From the leaves, remove the thick veiny part, its like an upside down "Y".  Chop leaves into strips.

Place wash leaves in large pot; add water, 1 tsp of salt, and a 1/2 tsp of baking soda.  Bring to a boil, lower heat, and simmer for one hour, stirring frequently.   (I used a pressure cooker).

While leaves are cooking, clean calamari and cut into rings.  Chop onions.

Drain luau thoroughly; mash luau to remove liquid until it looks like shredded spinach.

Saute onions and calamari in the butter until onions are translucent.  Add coconut milk, luau leaves, and sugar.  Simmer for 30 minutes but do not boil.

If you do not know what luau is, its sort of like a german creamed spinach.  You can sub squid for pork or beef.

If you grow taro and harvest it, it took us 2-3 hours to cut and harvest the taro.
