Transplanting form AP to the soil.

I recently got my first AP system up and running, and most of my plants are doing AMAZING (I've never grown anything before!). Honestly, I expected to fail miserably (well my spinach did). But now I have more little lettuce and broccoli plants than I know what to do with! I was going to put in raised beds and move most of the broccoli out there, as they need way more space than I have. My grow bed is about 22in x 36in.

Any tips on moving plants from AP to the soil? How big should they be, do they need to "Harden off" at all? 

My system in in a shed, with grow lights, under the lights its a good 20 degrees warmer than outside (which is why my spinch isn't doing so good).
