I am in Pasadena, Texas and have been looking at where to buy and what to buy when I am ready. Right now I have a very small test system up and running recently. It is a 50 gal. hard pond with a small kids hard plastic pool for the grow bed, I will get pictures posted later. Here are the companies that I have found so far. The first one is in Kansas and the rest are located in Texas.

Freshwater Prawns (Macrobrachium rosenbergii) I talked with Craig Upstrom the owner and he was very nice and helpful on the phone.

This last one is a list of all the fish farms in Texas. This might make it easy for someone to find one close to them.

I have not used any of these places yet. I only have some Shubunkin Goldfish in my pond at this time. My lettuce, strawberries and cilantro are doing great.
There are a TON of suppliers out there, just depends on the species you are looking for. Ive used Aquasafra for Tilapia and they were very healthy (qty-1000, $100). You can buy from them at tilapiaseed.com. Ive got a large book of fingerling providers if anyone has a specific species you want to find in your area.
I get my catfish fingerlings from an elderly man near me. Less than an hour from Beaumont or an hour and 15 mins. from downtown Houston. About 5" long and  $ .50 each.
I'm not far away in Magnolia (NW Houston). Planning on doing a proof of concept rig later this year. I am leaning toward redear sunfish (bluegill) and maybe crawfish. Would love to raise yellow perch but I think the heat will kill them. :(

Overton Fish farm is midway between Dallas and Houston on I-45. They tell me there is no minimum order if the customer picks up the fish themselves. They will pack in an oxygenated bag inside a box for transport or you can bring your own container-aerator set up.
