Beetroot and carrots pale ... what nutrient?

My beetroot and carrot roots lack colour when harvested.

The carrots are pale orange, the beetroot also pale, with a small orange core.

The plants are doing well, but I am thinking that the cause must be lack of a minor nutrient responsible for colours. What would it be??

Rob bob (youtube) had the same issues with AP sweet potatoes. You could send tissue samples to a lab along with a healthy control to see whats missing.
